N-glycolylneuraminic acid (Neu5Gc)

Definition:

A common variant of sialic acid in many vertebrates that is not made by humans but can be incorporated from diets rich in red meat. Neu5Gc is derived from Neu5Ac by enzymatic addition of a single oxygen. In humans, the CMAH gene encoding the enzyme responsible for this conversion underwent a loss of function mutation over 2 million years ago.
