Oxalates

Definition:
Naturally occurring compounds found in many plants that can bind minerals, particularly calcium, to form poorly absorbed compounds. High levels of dietary oxalate can reduce the absorption of calcium and, in susceptible individuals, contribute to the formation of calcium oxalate kidney stones. Cooking methods such as boiling can substantially reduce oxalate levels in some foods.
